Mutton Biryani Recipe: A Delicious and Authentic Dish

Biryani is a popular Indian dish that is enjoyed by people all around the world. It is a flavorful and aromatic dish that is made with a combination of spices, meat, and rice. Among the different types of biryanis available, mutton biryani is one of the most popular and authentic dishes. The dish is a perfect blend of tender mutton pieces and perfectly cooked rice, infused with a variety of spices and herbs that give it a unique and delectable flavor. Here is a step-by-step guide on how to prepare mutton biryani at home.

Ingredients:

  • 1 kilogram of mutton
  • 2 cups of basmati rice
  • 2 onions, finely sliced
  • 4 tablespoons of oil or ghee
  • 1 tablespoon of ginger paste
  • 1 tablespoon of garlic paste
  • 1 cup of yogurt
  • 1 tablespoon of red chili powder
  • 1 tablespoon of cumin powder
  • 1 tablespoon of coriander powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of garam masala powder
  • 1 teaspoon of black pepper powder
  • Salt to taste
  • 2 bay leaves
  • 2 cinnamon sticks
  • 4 cloves
  • 4 green cardamoms
  • A handful of mint leaves
  • A handful of coriander leaves

Marinating the Mutton:

The first step to making delicious mutton biryani is to marinate the mutton. This is an essential step that infuses the meat with flavor and makes it tender. To do this, take a large mixing bowl and add the mutton pieces to it. Add the yogurt, ginger paste, garlic paste, red chili powder, cumin powder, coriander powder, turmeric powder, garam masala powder, black pepper powder, and salt to taste. Mix everything together well and set it aside to marinate for at least 2 hours.

Preparing the Rice:

To make biryani, it is important to get the rice right. Basmati rice is the perfect rice for biryani as it is long-grained and aromatic. To prepare the rice, wash it thoroughly in cold water and soak it in water for about 30 minutes. After that, drain the water and set the rice aside.

Cooking the Mutton:

To cook the marinated mutton, take a large pot or pressure cooker and heat 4 tablespoons of oil or ghee in it. Once the oil is hot, add the sliced onions and fry them until they are golden brown. Add the bay leaves, cinnamon sticks, cloves, and green cardamoms and fry for another minute. Add the marinated mutton to the pot and mix everything together well. Cook the mutton on low heat for about 45 minutes or until it is tender.

Layering the Biryani:

Once the mutton is cooked, it is time to layer the biryani. Take a large pot with a tight-fitting lid and add a layer of rice to the bottom. Then, add a layer of mutton on top of the rice. Add some chopped mint leaves and coriander leaves on top of the mutton. Repeat the layers until all the rice and mutton are used up. Make sure that the final layer is of rice.

Cooking the Biryani:

To cook the biryani, heat a large tawa or griddle on medium heat. Place the pot with the layered biryani on top of the tawa and let it cook for about 15 minutes. This will ensure that the biryani is cooked evenly and the flavors are infused throughout.
