1/2 cup chopped Coriander leaves
1/2 cup mint leaves
1 tablespoon garam masala powder
Salt to taste
4 cups water or fish stock (for cooking rice)

Step by step fish biryani recipe:

Step 1: Marinate the fish
To ensure your fish is flavorful, start by marinating it. Mix together the ginger-garlic paste, red chili powder, turmeric powder, garam masala, lemon juice, and salt in a bowl. Coat the fish fillets with this mixture and let them marinate for at least 30 minutes. You can add yogurt for extra tenderness and flavor.

Step 2: Prepare the rice
While marinating the fish, rinse the basmati rice under cold water to remove excess starch. Soak the rice in water for about 15-20 minutes. In a large pot, bring 4 cups of water (or fish stock for extra flavor) to a boil. Add a pinch of salt, bay leaves, cinnamon sticks, cardamom and cumin seeds to the soaked rice. In the same pan, layer half of the cooked rice over the fish mixture. Sprinkle garam masala, mint and coriander leaves on top of the rice. Place the cooked fish fillets on top of the rice, followed by the remaining rice. Cover the pan with a tight-fitting lid and cook over low heat for about 15-20 minutes. This allows the flavors to meld.
